Lemon Roasted Potatoes

Ingredient:

  • 1kg of potatoes
  • extra virgin olive oil
  • 2 lemons
  • 1 tablespoon of dried oregano
  • 1 tablespoon of coriander seeds

Instructions:

  1. Preheat the oven to 200 degrees.
  2. Peel the potatoes and cut them in half.
  3. Cut the lemons in half.
  4. Crush the coriander seeds in a pestle and mortar.
  5. Boil the potatoes in salt water for 10-12 minutes or until soft around the edges.
  6. Drain and let them steam-dry for 1 minute.
  7. Heat a few tablespoons of extra virgin olive oil in a the oven for a couple of minutes.
  8. Add the potatoes, lemon wedges, crushed coriander seeds and oregano.
  9. Season with salt and pepper.
  10. Toss until the potatoes are well coated in oil.
  11. Cook for 45-60 minutes in the oven or until they are golden on all sides. Make sure to turn the potatoes occasionally.
